Turkey Chili Con Carne

Ingredients (serves 4):

  • 2 tablespoons coconut oil

  • 1 red pepper, chopped

  • 1 yellow pepper, chopped

  • 4 cloves garlic, minced

  • 1 red onion, finely chopped

  • 500g minced turkey

  • 2 tbsp cumin powder

  • 2 tbsp mild chili powder

  • 2 tbsp thyme

  • 2 tbsp sage

  • 400g can of chopped tomatoes

  • 200g passata sauce

  • 1 tbsp tomato puree

  • 400g can of black beans, drained and rinsed

  • 400g can of red kidney beans, drained and rinsed

  • 450ml chicken or vegetable stock

  • Salt and pepper, to taste

  • Dash of maple syrup (optional)

  • Greek yogurt, to serve

  • Spring onions, diced for garnish

Instructions:

Heat coconut oil in a large saucepan or stock pot over a medium heat. Add the peppers, garlic, and onion and sauté for 3 to 5 minutes. Add the turkey mince and stir frequently until cooked through (about 7 minutes). Add the herbs and spices, and cook for a couple more minutes.

Next add the chopped tomatoes, passata sauce and tomato puree. Turn down the heat to simmer for 10 minutes, allowing the sauce to reduce and deepen in colour. Add the beans and stock then simmer for 30 - 40 minutes to allow the sauce to thicken.

Season with salt and pepper, and if using, add the maple syrup. Serve on top of brown rice and top with Greek yogurt and spring onions.
